Portuguese handmade honey
Honey has no recipe. It has flowers, time, and whoever takes it from the hive. There is rosmaninho honey (French lavender) from the Gerês, urze honey (heather) from the Beira, medronho honey (strawberry tree) from the Algarve, and multifloral honey that changes every year. These are the Portuguese beekeepers who extract cold, in small batches, and date every jar. You will find monoflorals, multiflorals and certified organic honeys, each one stating the floral origin, the apiary, and the year of harvest. That information is what changes the flavour and the way it keeps.
